French Toast without an egg batter? No way! Yes, way.
This vegan, gluten-free French Toast Batter is made with bananas and I used quinoa flour for a little extra protein. Gluten free or a hearty French or Italian bread seems to work best for this. Also, make sure you let it cook well on both sides and grease the griddle well.
Vegan French Toast Batter

6-8 slices of bread
1 cup So Delicious Coconut milk beverage
2 tablespoons quinoa flour
1 Tablespoon maple syrup
1/4 teaspoon cinnamon
1/4 teaspoon sea salt
1 teaspoon pure vanilla extract
– Extra maple syrup for after it is cooked
– Vegan butter spread such as Earth Balance.
Put the coconut milk beverage, floud, maple syrup, cinnamon, sea salt, vanilla extract and banana in a food processor and blend will smooth. Transfer mixture to a shallow casserole dish.
Get the skillet hot and grease it well.
Dip each side of the bread slice in the batter to lightly coat it and then place it on a skillet.
Cook until browned and then flip and do the same.
Serve with warm maple syrup.
