Guacamole was another one of those dishes I thought was super hard and was afraid to make. My friend Amy makes a fabulous one, and when I asked her about it, she told me it was super easy. Still, it made me nervous.
Well, having a four ripe avocados and not wanting them to go bad, I decided to try it. And, as with most things I am usually afraid to make, the idea of it was scarier in my head.
This vegan, gluten-free guacamole is simple and basic to make. From this recipe, you can add other items to customize it, such as fresh jalapeños, chipotle seasoning, pineapple pieces or other items to make it unique.
4 ripe avocados
1 tablespoon fresh lemon juice
1 roma tomato, seeded and diced
1 small clove garlic finely chopped
1/4 cup onion chopped
Half and seed the avocados, removing the flesh and put in a bowl.
Mash the avocados until mostly creamy and there are no large chunks.
Add in the lemon juice, tomato, garlic and onion.
Mx well and serve immediately or refrigerate.
