Super Easy Vegan, Gluten-Free Banana Waffles

If you’re in a pinch, and don’t have time to make vegan, gluten-free waffle mix from complete scratch, this is one of my favorite short-cuts. You do have to like banana, however, because while it isn’t strong, it does come across in the taste. 

All you do is follow the directions on the back of the Bisquick Gluten-Free Pancake and Baking Mix for waffles and substitute vanilla flavored coconut milk for regular milk, and a mashed banana for the egg. You may need a little more coconut milk than what the recipe calls for if it’s too lumpy.
