And, yes, my smoothie kick continues!
This time it’s inspired by a trip to the farmers market where there were delicious looking strawberries and fresh mint, and the fact that I have been doing a log of reading on super foods.
The raw cacao adds a hint of chocolate aftertaste, but is not too strong, so if you are expecting a strong fake milk chocolate flavor, you will be disappointed. Te fresh mint leaves also just add a hint of flavor, but doesn’t take away from the other flavors.
Take the time to taste the smoothie are you’re making it and adjust the amount of mint, strawberries and cacao to fit your tastes.
Vanilla Strawberry Mint Raw Cacao Smoothie

1 1/2 cup sliced strawberries
1/4 cup light coconut milk (I use Trader Joes)
6 ounce container vanilla flavored cultured coconut milk (I use So Delicious)
5 fresh mint leaves
2 teaspoons raw cacao powder (I use Navitas)
2 ice cubes
In a blender combine the strawberries, coconut milk and cultured coconut milk. Blend until smooth. Add in the mint, cacao powder and ice cubes. Blend until smooth.
