Cilantro Lime Quinoa

This is absolutely one of the most versatile quinoa recipes, and can be used for so many things. It’s delicious on it’s own, as a side dish or as a base for a number of dish.

Top it with roasted butternut squash, peppers and onions or replace it rice with this in your enchiladas or burritos. The uses for this is endless! Plus, it’s vegan, gluten free, packed with protein and so easy to make.

Cilantro Lime Quinoa

1 cup tricolor quinoa {I use Trader Joe’s}
2 cups vegetable broth
1 lime
1 lemon
1/2 cup chopped cilantro

Rinse the quinoa under cold water.

Add the quinoa and vegetable broth to a pot and bring to a boil. Simmer covered for 15-20 minutes or until liquid is absorbed. {If it’s taking a while after the 15 minutes, raise he heat and stir until the broth is absorbed, making sure it doesn’t burn.} Remove from heat for about 5 minutes.

In a separate bowl juice the lime and lemon. Add the quinoa and cilantro. Stir well and let sit.

Serve immediately, or reheat as needed.
