Every time I log into Facebook this time of year, I see at least one status having to do with McDonald’s famous Shamrock Shake. Several years ago, and against my better judgement, I tried one. I quickly decided it was not for me.
It got me thinking — wouldn’t it be great if there was a healthier version, available to drink on St. Patrick’s Day? So after a little experimenting, I came up with a vegan, gluten-free, dairy-free, “adult” version that I personally really like because it’s not too sweet.
This recipe makes about two servings, and is packed with healthy coconut-based products from So Delicious — a company whose products I really enjoy.
Vegan, Gluten-Free St. Patrick’s Day Shake

1 1/2 cups So Delicious vanilla bean coconut milk non-dairy frozen dessert
1/2 cup So Delicious coconut milk beverage (add more as need for a thinner shake)
1, 6 ounce container So Delicious vanilla cultured coconut milk
1/4 cup creme de menthe
3-4 ice cubes
several sprigs fresh mint for garnish
Combine all ingredients in the blender and blend until smooth. Serve in a rocks glass with a fresh sprig of mint as garnish.

Every year I get a Shamrock Shake, convinced it is going to taste delicious…and every year it tastes like toothpaste and I immediately throw it out. This year I have finally learned my lesson and just made myself a nice mint milkshake at home. I have no idea how Shamrock Shakes somehow wormed themselves into a nostalgic memory, but they definitely do not belong!
