Strawberry Mint Champagne Cocktail

There is something about champagne that I like. Maybe it’s the bubbles, maybe it’s the dryness, maybe it’s the fanciness that comes with it. Either way, I like creating new drinks with it.

I had some fresh mint leaves and frozen strawberries that were in desperate need of using. And, I just happened to have a bottle of champagne, also in the fridge.

The strawberry flavor is much more prodominate than the mint on purpose. If you happen to like it more minty, just add more of the simple syrup. I like it this way, where there is just a faint after-flavor of it. You can make this like is, or combine equal parts this mixture and champagne for a slightly stronger cocktail.

Feel free to garnish with a fresh strawberry on the side of the glass. I would have, but I no more strawberries left!

Strawberry Mint Champagne Cocktail

1 1/4 cups champagne {divided}
1 {overflowing} cup of frozen strawberries
3 tablespoons minted simple syrup

Wash the frozen strawberries under warm water just to get them slightly soft.

In a blender puree the frozen strawberries. Add 1/4 cup of the champagne and blend.

Add the remaining champagne and minted simple syrup, and blend until smooth.

Pour in champagne glasses, and enjoy!

Makes about 6 servings.
