When I started out making these cupcakes, I had an exact plan in mind: Green cupcakes with white icing and a shamrock made from sprinkles. Well, that got blown right out of the water when at 1 a.m. as the first batch came out of the oven and I was preparing to decorate there was no shamrock cookie cutter in sight to use as a stencil.
I could have sworn I had one. Apparently, I didn’t.
But, here is the more important part — learning to improvise when you cook. I took what I had, got creative and did the best I could. And, I think they came out pretty well!
