Last night I was beat.
I spent Thursday home from work and sleeping — something every odd for me. So, when Friday evening rolled around I really didn’t feel like cooking after a packed day. But, I also hadn’t really eaten the day before, so I was hungry and knew I needed to make something decent.
A veggie pizza sounded like a good idea and I knew it would be a good way to use up some of the items in my fridge, including an Udi’s gluten-free pizza crust that’s been sitting around for a while. So, I steamed some broccoli, sliced a tomato and chopped up two cloves of garlic. There was also some left over ricotta and shredded mozzarella.
Don’t you just love when a completely unplanned dinner just comes together?!
