After making the Bacon and Cheddar and Broccoli and Cheddar potato skins, I had a bowl full of potato insides and wanted to make more than just mashed potatoes.
I remembered that when I worked in hotel catering we had these delicious little puff pasties stuffed with potatoes we would serve. Luckily, I had some Pepperidge Farm Puff Pastry in the freezer, as well as some smoked Gouda and figured I would mess around with a recipe.
They came so tasty! Warm, flaky and just the perfect amount of cheese. The smoked Gouda added flavor, but didn’t make the potatoes cheesy. If you want to make this vegan, just skip the cheese.
Smoked Gouda Potato Puffs

1 Pepperidge Farm Puff Pastry sheet {thawed}
1/3 cup chopped onion
1 clove garlic, finely chopped
1/2 cup shredded smoked Gouda
the inside of 8 baked potatoes {about 2 cups}
salt
pepper
Preheat the oven to 400 degrees.
If your potatoes are cold, warm them in the microwave. Then, mash them until there are no large lumps.
Stir in the garlic, onion and Gouda, as well as a sprinkle of salt and pepper.

On a cutting board spread out the pastry sheet and cut into nine even squares. {Usually you can follow the creases that are naturally in the dough}
Begin stuffing the the puffs by putting about a tablespoon of the potato mixture in the center of each square.
Take one corner of the pastry square and connect it diagonally to the other corner. Then gently press the rest of the pastry together, sealing it.
Repeat until all the squares are complete.
Places on a non-stick cookie sheet and bake for 15-20 minutes.
