For the most part, I’ve stopped using store-bought salad dressings when I’m home. Instead, I usually just drizzle a little olive oil with garlic salt and basil over my salad, but it’s getting a little boring and I wanted some flavor in my salad.
Since I’ve been on a lemon kick, I whipped up this Fresh Squeezed Lemon Salad Dressing. Simple, healthy and all real ingredients!
In this case, a little goes a long way. The fresh lemon adds quick, but not overpowering flavor without having to drench your lettuce.
1 small clove garlic
1 sprig of Italian parsley
1/2 teaspoon of sugar
4 tablespoons of extra virgin olive oil (I used Lucini Estate Select)
1/8 teaspoon (pinch) salt
1/8 teaspoon (pinch) ground pepper
Cut the lemon in half and juice it over a small bowl. Add the olive oil to the lemon juice.
Remove the parsley leaves, discarding the stems, and finely chop the leaves. Add them to the lemon juice.
Mince the garlic, and add that to the juice. Finally, add in the sugar, salt and pepper.
Whisk until well blended.
Let sit about 10 minutes and whisk again right before serving. Spoon over salad.
Makes about 2 ounces.
