We made these Pomegranate Rum drinks for Christmas, but they would make a fabulously refreshing summertime drink enjoyed on the back porch while soaking up the sun. This mixture makes two drinks served in rocks glasses, but to make a larger batch, just double it making sure the ratio stays the same.
Make your own pomegranate simple syrup so there’s no added junk in it and you have a clean, fresh taste that isn’t too sweet.
Fill two rocks glasses with ice, and set aside.
Fill a stainless steel shaker, or large glass, with ice. Pour in the pomegranate syrup, rum and seltzer. Using a long spoon, stir well.
Cover the top of the shaker with a strainer and pour into the glass. Garnish with a lime.
