Healthy Banana Granola Cup ~ At-Your-Desk Breakfast

Breakfast used to be pretty easy, an egg sandwich or oatmeal, sometimes a bagel with cream cheese or maybe an English muffin. But, since I started learning toward eating gluten free and then shortly after that the thought of eggs started to make me sick, breakfast became a challenge.

Don’t get me wrong, every once in a while I enjoy a nice egg and cheese on a hard roll, but it’s very rare. There are tons of gluten free toasts, bagels and more out there, but I get bored eating the same old thing all the time — not to mention all the carbs. Plus, I need something that’s easy to put together and doesn’t make a mess since during the week I eat my breakfast {and lunch} at my desk.

I started making this banana granola mixture last week and have fallen in love with it. It’s pretty healthy, filling, simple and if you’re a vegan who doesn’t use honey, just substitute agave instead. Oh, and you can make it fresh! I take all the ingredients with me to work and just combine them once I’m there, so nothing gets soggy on my way in.

Healthy Banana Granola Cup

1 banana
1/4 cup Udi’s Gluten Free Original Granola
1/8 – 1/4 cup dried cranberries (I use Trader Joe’s)
1 tablespoon honey

Peel and cut the banana into thin, round slices over a bowl. Top with the granola and cranberries. Drizzle with honey.

Enjoy!

*Note: If you’re commuting and making this at work like I do, combine the granola and cranberries in a small plastic container, and keep a small jar of honey at your desk.

  2. This is a great photo. You know its a good picture when people want to eat it right now! I love granola and I have added berries to it many times but the thought of using banana has never crossed my mind. It is fast and easy and that's what many people are looking for these days especially in the morning.
