There’s No Rush to Eat Thanksgiving Leftovers

If you haven’t guessed already I’m a big fan of leftovers, and since I’m going back to being pretty strict with eating gluten free *and* saving money, they are even more important — especially when it comes to lunch.

Most of the leftovers I ate a day or two later, but the items I could freeze — like my Cranberry Black Rice — I did on Thanksgiving night and am enjoying it for lunch today and tomorrow.

Since I only stuffed one acorn squash with the rice, but made enough to do at least another one or two, I thew the rice in a container and put it in the freezer.

There’s no rush to eat the leftovers the next day — put them in the freezer and savor those delicious goodies you spent so long making at a later time!
