Ah, the weekend. It was supposed to be spent writing, updating my resume, sending out some new pitches, experimenting with a few recipes and writing. Lots and lots of writing. I owe three different outlets blog posts and I still need to write about all the fabulous opportunities we had and did while we were in Disney World.
Instead, I’ve spent a majority of the day in a panic over my furnace. A very long story short, it’s not working. A local company just left a little bit ago and apparently I need a part that of course they can’t get until at least Monday — and that’s if somewhere has it in stock.
In the mean time, I have no heat, which also means I have one very cold doggie. You can read more about that on my pet lifestyle website, My Tail Hurts From Wagging So Much.
I guess, that means it’s time to cook, so I can heat up the house. 🙂
Since yesterday’s blog, I’ve had a few more garden surprises. I found a butternut squash, a bunch of poblano and habanero peppers, as well as, more eggplant.
Yes, more eggplant. If you have a favorite dish you make with eggplant other than parmesan, rollatini or ratatouille, please let me know in the comments below. I’m looking for some new things to do with it.
I’m heading out now to pick up a few things to make what will hopefully be a vegan, dairy-free creamy butternut squash cauliflower soup! I can’t wait to share that adventure with you.
