I found myself with a box of Grape-Nuts cereal, and decided the recipe on the back sounded yummy, but wanted to add a little more flavor than I thought it would have otherwise. The bars come out crunchy, and take seconds to make. Plus, one serving of the cereal has 7 grams of fiber.
They were a tad bit too sweet for my liking, and if I make it again I would add the chocolate chips at the end, so they don’t melt.
Grape-Nuts Snack Bars

3/4 cup reduced fat peanut butter
3/4 cup light corn syrup
1/4 cup honey
1 cup sugar
1 cup peanuts
1/2 cup white chocolate chips
4 cups Post Grape-Nuts cereal
In a large glass bowl microwave corn syrup, honey, sugar and peanut butter on “high” for two minutes. Remove from microwave stir in cereal and peanuts. Mix well, and then stir in the chocolate chips. (This is where I originally put the chocolate chips in before the cereal, but it was so hot they melted!)
Press mixture in a 13×9 inch pan sprayed with cooking spray and let cool completely.
