One of the major reason I doubt I will ever be able to be a full vegan is mozzarella. Every other cheese I could easily do without, but a good mozzarella and tomato salad with some fresh basil — that would be really hard to give up.
Our plan was to find a local Italian market, and buy fresh mozzarella to go with the tomatoes and basil we grew in our garden, we were shopping and lost track of time.
Lucky for us, Sorrento makes a line of “fresh” mozzarella cheese, and even has a package where it comes pre-sliced — which for me is awesome, because I can’t cut a piece of cheese straight to save my life!
This so easy and takes minutes to make. You will have extra cheese left, so you can make more or just get more tomatoes and basil and pile them on.
1 package of Sorrento fresh sliced mozzarella cheese
1 large tomato
6 basil leaves
fresh ground pepper
fresh ground sea salt
Slice the tomato and alternate them with sliced mozzarella on a plate in a circular pattern. Chop two of teh basil leaves into large chunk to match the number of tomato slices you have. This took us several tried to make it look pretty; hopefully you are a lot better at it than we were on the firts go around.
Arrange the remaining four basil pieces in the center of the plate, sprinkle with fresh ground salt and pepper and then drizzle with oil.
