My freezer decided it was going to start to defrost — in 90 degree weather. So, that left me scrambling to find somewhere to put a bunch of frozen items, as well as forced to me just cook some what I had in there.
Although I purchased them frozen, you have to defrost them before using, so I figured I would just make something with them. This is how the Triple Berry Chocolate Cream Dessert was born. there are three berries in the shells, but you can only see one.
You will have extra chocolate cream left over and can be used as pie filling, thrown into individual graham cracker crusts or just eaten on its own in a dessert dish with berries on top. I would pair this with a hardy red wine or champagne.
1 (or up to 3) Athens Mini Fillo Shells
10 oz. plus one tablespoon, heavy whipping cream (separated into 6 oz., 2 oz. and 2 oz.)
10 oz. Nestle Semi-Sweet Chocolate Chips
1 Tablespoon sugar
4 Tablespoons black raspberry liqueur (separated into 2 tablespoons, 1 tablespoon and 1 tablespoon)
Place a metal bowl, whipping cream and whisk in the freezer.
In a double boiler, melt the chocolate chips. If you are like me and don’t have one, you can use a glass bowl over a saucepan with water inside. Once the chocolate starts to melt mix in two tablespoons of the liqueur, and continue to mix until melted.
Take the metal bowl and whisk 6 oz. heavy whipping cream and 1 tablespoon sugar until it starts to form small peaks. Add half of chocolate and continue to whisk/mix. Don’t worry if it’s clumpy, just continue mixing till smooth.
Once it’s smooth, add in rest of chocolate, 2 oz of heavy whipping cream, 1 tablespoon raspberry liqueur and again whisk and beat till smooth.
Add in remaining 2 oz of heavy cream and remaining tablespoon of raspberry liqueur and whip until peaks once again start forming and a thicker consistency is formed.
Slice strawberry into tiny, thin pieces and place in the bottom of shells.
Using a teaspoon fill each shell to the top with the chocolate cream and top with a single blueberry. You could put the strawberry on top, as well, but I like the idea of biting into the desert and having the strawberry inside.
