Stuffed and steamed artichokes are one of those foods that remind me of the fun times at my grandmother’s house. She would frequently make them for me, my mom and aunt to enjoy. It would be a complete meal for us.
Usually, she would stuff it with bread crumbs mixture that would include raisins, pine nuts and little bit of olive oil. If you try this version, make sure the bread crumbs aren’t soaked with oil, but just moist. I also usually add some salt and pepper.
To make artichokes like this, first cut the tops off, then snip the tops off the rest of the leaves using a scissors, then gently pull apart the leaves and stuff with your mixture. In addition to stuffing the inside, I also put some of the bread crumb mixture on the outside leaves.
Place the artichokes in a steamer pot, drizzel with oilve oil, cover and cook until you can easily pull out a leaf of the artichoke.
